Ingredients 2 Tbls. Olive oil ½ onion, chopped ½ green bell pepper, chopped 3 cloves garlic, minced 1 1/2 cups white rice 3 cups water 2 Tbl. Better than bouillon, chicken 2 Tbl. Mydingr’s Taco Seasoning 2 tsps. Cumin
Instructions: I use a rice cooker for this recipe. In a small skillet pour the olive oil in the bottom and heat, then add onion, bell pepper and minced garlic cooking until it becomes soften. In the rice cooker put the rest of the ingredients and then place the onion, bell pepper and garlic on top. Stir to mix. Cover with the lid and set to cook based on the cookers instructions. An Instapot is also an amazing way to cook this recipe. You can sauté the onion, bell pepper and garlic right in the bottom of the pot and then add the remainder of the ingredients and cooked based on the instructions of your pot.
